Caprice - The return visit was perfection


My best mate had not been to visit for over eighteen months, so when he set out the criteria for our reunion dinner, there were two considerations.  It had to be French fine dining and there had to be a memorable fromage.

There are many high quality French fine diners here in Hong Kong, but there is only one with a cheese platter that can only be carried to your table by two wait staff.  It ended up being an easy choice, so we booked into Caprice, located at the Four Seasons.

My first and last visit to Caprice had been memorable, enjoyable, but not spectacular, so we were taking a bit of a risk by recommending it to the Big Boy.  If it didn't live up to expectations, we'd be hearing about it for many years to come.

With Two Michelin stars, Caprice is one of the best restaurants in our adopted city, and even though it lost a Michelin star in 2014, chef Fabrice Vulin has maintained an incredible standard of dining.  (For more information on Fabrice Vulin, check out my previous post).

Access to Caprice is through the beautiful Four Seasons hotel, and you'd be forgiven for thinking you'd entered ancient Greece with all of the marble leading up to the front of the restaurant.  An interesting dichotomy, there is just a simple plaque leading up to the doors that open automatically before you're granted access to a decadent and plushly decorated dining room and a magnificent and massive open style kitchen.

Amber - The 4Hands with Andre Chiang


I love the concept of 4 Hands dinners.  Two chefs working out of the same kitchen, producing a meal that highlights their best work.

I've been to a few.

But never one with the caliber of chefs from the recent dinner showcasing the skills of two of the world's top chefs.

Richard Ekkebus from Amber and Andre Chiang from Restaurant Andre, are two of the best chefs in Aisa, with their restaurants featuring in both San Pellegrino's Asia and Worlds best restaurants. It's fair to say that attending the special, two-nights only event, was high on my list of priorities.

I'd eaten at Amber before and rated the experience as one of my favourite meals of 2015 (see post here), and while I'd never dined at Restaurant Andre in Singapore, I had travelled to Taipei to visit Andre's Taiwanese outlet RAW.  Unsurprisingly, it was also one of my top meals of 2015.

Andre's visit to Amber formed part of his global tour to promote his publication of 'Octaphilosophy: The Eight Elements of Restaurant ANDRÉ' - a book that all diners would be given at the end of the 4 Hands dinner.

Pierre Hong Kong - Lunch at the Mandarin Oriental


In roughly thirty six hours I head off to Paris for a Gastronomy tour of arguably the home of modern cuisine.  To say I'm excited is an understatement.

I've been dining out at quite a few French fine dining restaurants of late, really getting myself psyched for the real deal in Paris.  I did have a cunning plan to go on a short hiatus from French food in the month leading up to our Paris trip, mainly so I didn't overdo a good thing.  It didn't work out so well though, barely a week into my self imposed ban, I found myself booked into Pierre at the Mandarin Oriental.

I like to tell myself that it was because I was having lunch with a mate from the UK that I needed to go somewhere special.  I also told myself that since I'd made a booking for Pierre Gagnaire in Paris, and surely I needed to have dined in the Hong Kong outlet before sampling the French maestro's own cooking.  In reality, I'm just a sucker for French cuisine and any reason seemed like a great idea a the time.

Located on the 25th floor of the luxurious Mandarin Oriental Hotel, Pierre is one of the dozen or so two Michelin Starred restaurants in Hong Kong.  Pierre Gagnair is a culinary genius who needs little introduction in the world of modern French cooking and his Asian outlet is fronted by Gagnaire protégé, Jean Denis Le Bras.  At just 39 years of age, Chef Jean Denis was the perfect choice to lead the Pierre team in Hong Kong, accumulating an impressive amount of experience in his native home before spending time honing his skills in London.

Grissini hosted by Gaetano Trovato - 2 Michelin Stars


I always get just a little bit excited when I discover that international chefs are coming to Hong Kong for guest stints, especially when they are as renowned as Chef Gaetano Trovato, owner of Two Michelin Starred restaurant Italian restaurant Arnolfo.

Chef Trovato was coming to visit his former protege Alessandro Cozzolino who currently holds the position of Chef de Cuisine at the Grand Hyatt's Grissini.  Spending a few short days in the kitchen of the Italian fine dining restaurant, there was a limited opportunity to sample the maestro's take on classic Italian cooking.  

Of course, we had to take advantage of the narrow window of opportunity and make a reservation.

We'd picked the coldest day on record to visit Grissini, it had barely risen beyond 2 degrees celsius in Hong Kong, so when we arrived at the Grand Hyatt, we were dressed in clothes more appropriate for skiing in the Italian alps.  When we made our way through the grand hallway of the Hyatt and up to the entrance to Grissini, we'd only just managed to get the feeling back in our fingers.

London - Hibiscus


It's extraordinary the lengths I'll go to sometimes to have dinner with a mate.  

I found myself travelling to the UK at the same time as a buddy from Brisbane, so of course we arranged to meet up for dinner. The last time we caught up for a meal was the very special Fish House on the Gold Coast (see post here) and while that was a bit of a trek, by meeting up in London, we'd outdone ourselves.

I'd already hit up a couple of two Michelin Star restaurants for my short trip to London (The Square and Marcus), so thought what the heck, another couldn't hurt, right?  The very highly rated Hibiscus was the target of my attention and I was excited to check out the very passionate offering from Claude Bosi.

Originally opened in 2000, Claude purchased a site in the market town of Ludlow, which quickly earned a reputation as destination dining spot, earning a coveted Michelin Star in its first year of operation.  The second star was not far behind in 2003, which Claude has kept to this date.  Not even a move from Ludlow to central London could put a dent in the fine diner's popularity.  If anything, the move significantly enhanced the Hibiscus brand.

I'd arranged to meet Kev at Hibiscus, which was a lot harder to find than I thought possible. Google Maps had me all over the area and while I was able to find Jason Atherton's Pollen Street Social, Hibiscus eluded me.  I literally had to to a 'house by house' inspection before I found the little brass nameplate.  Talk about a discreet entrance!  I waited outside for Kev, who regaled me with his own tale of trying to find the restaurant.

London - The Square


I almost don't know where to begin, honestly.

I was lucky enough to spend a couple of weeks working out of London, which was exciting enough on its own, but even more so given my love of fine dining.  With a veritable smorgasbord of incredible restaurants on offer, how would I ever be able to narrow the choice down to just a few special dining establishments?

Let me start off by saying, I couldn't get into my first, second or third choice restaurants, even though I had plenty of time to book.  Let's just say that some restaurants are almost impossible to get into, and leave it at that.  As I worked my way down my list of restaurants I'd dreamed about dining in, I finally found a lunchtime spot available at Mayfair stalwart The Square by Phil Howard.

With two Michelin Stars held since 1998, The Square is an institution in London and chef and co-owner Phil Howard regarded as arguably one of the best chefs in Europe.  In fact, in an Instagram conversation with a former alumni of the Square, a guy that runs one of the best restaurants in Brisbane, it was put to me that the Square and Phil Howard were responsible for producing and inspiring thousands of top chefs globally.  The reverence in which both are held were clear and I knew I would be in for a treat.

Wagyu Takumi - as good as it gets


Some of the best meals I've had have been eaten sitting at a bar. Now, that might sound a bit strange, but the type of bar I'm referring to are 'bar style seats' that wrap around a kitchen, taking the drama and theatre that happens in a kitchen and bringing it to the diner.  The fact that there are more and more restaurants that either have 'chef's tables' or have open kitchens is testament to the fact that diners want to have more than just a meal.  They want the whole experience and that includes interacting with a chef.

I had a suspicion that I was going to have a memorable meal, I mean the very fact that I was heading to a Two Michelin Starred restaurant was enough to almost guarantee a great meal.  The fact that a couple of my favourite cuisines were combined surely had something to do with my high expectations as well.  We were heading to Wan Chai and Chef Mitsuru Konishi's Wagyu Takumi and my expectations were skyrocketing!

Chef Konishi is no stranger to Michelin Starred restaurants, apart from running one of the few Two Starred restaurants in HK, he spent time at fellow Two Star restaurant, L'Atelier de Joel Robuchon in Tokyo, as well as a numerous Michelin restaurants in France, including Taillevent, Michael Rostand and L'Hotel De Carantec.  It's that type of pedigree that gets my heart aflutter!

In an amazing twist of good fortune, we were able to secure a table for two at Wagyu Takumi on the morning of our Saturday night reservation.  The food gods were indeed smiling down on us.  It was more remarkable when you consider the size of the restaurant, which seats a cozy twelve diners at a time.  As we arrived for our 7:30pm reservation, we almost got lost in the back streets of Wan Chai, but Google Maps had us at the slightly hidden front door just in time.  As we announced ourselves, the door slid open 'Star Trek' style and we made our way to one of those few precious seats.

G20 Global Flavours - Restaurant 2


If you're in Brisbane and you've not heard about the G20, then you've probably been in a deep coma in one of the City's fine hospitals.  For most of us who have been hearing about it non stop, or if you work or live in the city, have been involved in many briefings about the event, it could seem like its big and scary event.  

There is more to the G20 event than the leaders of the world coming to our fair city to discuss, well I'm not really that interested in what they plan on discussing, but there is more going on than meets the eye.  Given that the eyes of the world will be on Brisbane, it's a huge opportunity for us to showcase our fair city and all that it has to offer.

In conjunction with Brisbane Marketing, many of Brisbane's best restaurants have joined the party by participating in a month of foodie celebrations.  Global Flavours the the culinary celebration of Brisbane's international-standard cuisine and local produce.  I've been asked to help promote this once in a lifetime event by doing the tough job of visiting some of the restaurants that are involved - yeah, I know, but someone's gotta do it.  You can also get involved by visiting one of the city's participating restaurants and enjoying the best that Brisbane has to offer during the month of November.  See the complete list here.

My first stop of the #GlobalFlavours trail was one of Brisbane's most iconic dining spots, Restaurant 2 on Edward Street.  The classic fine diner by David Pugh is perhaps one of the best known and most loved restaurants in Brisbane and a restaurant that I've been to many times (see post here).  In one of the most beautiful old buildings on the corner of Edward and Alice Streets, the botanical gardens are the backdrop for the 'Two' dining experience.  With massive windows, reminiscent of New York park dining, Restaurant Two delivers on style and substance.

Esquire - what more can be said? This place is perfection!


If there was one restaurant that defined my dining habits for 2013 it would have to be Esquire in the CBD and to be more precise Esq.  In my first full year of writing about my food experiences, I visited more new restaurants in twelve months than ever before.  While I loved checking out many new restaurants and revisiting many that I hadn't been to for a while, there was a part of me that still liked to be known as a regular somewhere.  That somewhere happened to be just across the road from me and recognised as the best restaurant in town.

I've written about my experiences at Esq and Esquire more than any other restaurant I've been to, and with good reason.  It's just a superb restaurant and dining experience.  Every.  Single.  Time.   Co-owners Ryan Squires and Cameron Murchison along with head chef Ben Devlin make up the team that continue to surpass the expectations of the Brisbane dining scene.  Since I've written so much about the restaurant, I'm going to go straight onto the food, but if you've not heard of Esquire before or want some more info, you can check out my previous posts - here, here and here

Over the last year, it seems as if I have eaten at Esq two or three times a month but upon reflection it had been over twelve months since we had the full degustation dining experience at Esquire.  I thought there would be no better way to see out the year than a full degustation, and since the last night Esquire was open was Christmas Eve, we though it would be a lovely little 'Festivus' present for ourselves.

Ortiga - sunset falls on a Spanish great


What tumultuous time it is with Brisbane restaurants of late.  There has been much movement with many new restaurants opening but sadly some closing as well.  The last few weeks have heralded the news that some of Brisbane's best and most awarded restaurants are closing down.  First was the news that after only a year in operation Bistro One Eleven would shut its doors immediately and then later the same day was the sad news that one of the country's best restaurants would also be shutting its doors.

The news that Ortiga was to shut down hit me hard, it's not only one of the best restaurants in the country, it's one of the most imaginative and creative restaurants I had been to.  Ortiga still seemed so relevant in today's cut throat restaurant industry having risen two places in the Gourmet Traveller Top 100 restaurants to number 28.  It also hit me hard as it was a regular special occasion dining spot and  I was booked in to visit for my wedding anniversary, indeed a special occasion.  While I was incredibly saddened by the news, the one consolation was that Ortiga would continue to operate for a few weeks and that we could still have our special occasion dinner, only now it would also be a farewell dinner.

The partnership between Simon Hill and Pablo Tordesillas had indeed been a special one.  Simon has had the knack of building special partnerships after such a long and successful relationship with Jason Peppler at Isis, ironically in the same location.  Isis was a mainstay of the Brisbane dining scene for around twelve years before it's ultimate transformation from Modern Australian fine diner to Spanish award winner.  It seemed as if the success of Pablo and Simon would continue on for equally as long, but incredibly Ortiga will be closing its doors after five incredibly successful years.

Esq - a new menu thats out of this world


I have found myself falling to Esq as my default 'go to' restaurant when I don't feel like cooking at home, which admittedly is a fair bit.  This might seem strange, a Three Hatted restaurant as the 'local' but I live really close and the food is simply amazing.  I have written about Esq and Esquire a few times over the last twelve months.  So it's no surprise to my regular readers that I love the food that owner and head Chef Ryan Squires and his amazing team put together.

While I really love the food, I have been telling my best friend (the Big Boy) about Esq and Esquire for a long time and he had continually refused to come along and check it out with us.  It's not a complete surprise that the Big Boy didn't want to check out my recommendation.  There is a history between us, whenever I have recommend a restaurant and we go to check it out together, the night we go the food ends up being sub par (just for his visit.....  he is cursed!).  The Big Boy now lives overseas and happened to be back in Brisbane for a quick visit, so I decided to take the risk and get him over to Esq to check it out.

There was a dual purpose for wanting to write about this particular visit, Esq has a new menu and it's definitely worth writing about.

Ortiga - when only the best will do

December seems to be Spanish month!  After visiting a couple of tapas restaurants I thought it would be time to get along to the king of Spanish tapas in Brisbane, Ortiga.  For me, Ortiga has re-defined the way we look at tapas and elevated the humble meal into a gastronomical delight, fine dining at its absolute best.

Simon Hill is responsible for Ortiga on the site of his once famous Brisbane institution, Isis Restaurant, on Brunswick Street Fortitude Valley.  Isis was recognised as Brisbane's best for a long time and Simon ran this in conjunction with one of my all time favourite Chefs, Jason Peppler (recently of now closed Confit Bistro).  It took a long time for Ortiga to be developed, with the Isis site empty for around two years before it's unveiling.  

I wasn't long before Ortiga achieved the ultimate accolade as being voted Brisbanes Best Restaurant in the Gourmet Travellers Top 100.  Ortiga is one of only three restaurants in Brisbane that has been awarded two chefs hats in the prestigious Brisbane Times Good Food Guide and two stars under the Gourmet Travellers awards.  Ortiga is also ranked the 30th best restaurant in Australia.  There are some serious accolades here for a restaurant that has only been open since 2010!

Pablo Tordesillas is the genius head chef of Ortiga who has worked in some of the world's best restaurants and learned his trade under the tutelage of Richard Corrigan (regular judge on the Great British Menu) and has spent time with one of Britian's most respected chefs Phillip Howard from two Michelin starred, the Square.

Aria - simply stunning

There is a proliferation of cooking shows on TV now days and with cooking shows comes the concept of the celebrity chef.  To be honest, I have mixed feelings about celebrity chefs; I mean they have usually done really well to be at the top of their game to get the opportunities........  but on the other hand, when going to the restaurant of a celebrity chef, it's really unlikely that they will be there.  Do they need to be?  I think so.


Aria's owner is one of the most recognised names in food and Matt Moran has a reputation for uncompromising quality in his two Aria restaurants (Aria Blue & Red).  Aria is located at Eagle Street in the old Pier Nine building and went through extensive renovations a few years back.  Aria Brisbane is a multi award winning restaurant with two coveted chefs hats from the Brisbane Times Good Food Guide as well as being ranked number 34 in the Gourmet Travellers list of top 100 restaurants.  I still remember the first time I went to Aria on the 18th of August 2009, it was a couple of days after it opened to much fanfare and was my birthday!  I loved it then and each time I have been back since.

There was no special occasion today, just lunch with a mate.  Aria has a pretty amazing deal on for lunches; 1 course for $35, 2 courses for $55 and 3 courses for $70.  This represents amazing value for one of the top restaurants in Brisbane.  The menu for the lunch deal is pretty much the same menu for dinner, with only a few small changes, but has a wide range of fantastic options.  EC and I opted for the 3 course option
